Chickpea, Lemon and Mint Balls

A small bite that smells fresh and genuine. Chickpea balls are made from a few simple ingredients and enriched with the notes of lemon and aromatic herbs, for a delicate and well-balanced result. Ideal as an appetizer or a main course.

The ingredients

150 g of Bartolini Whole Chickpea Flour

220 ml of water

zest of 1 lemon

1 tablespoon of lemon juice

1 tablespoon of Bartolini extra virgin olive oil

chopped parsley

fresh chopped mint

salt and pepper to taste

breadcrumbs to taste

The preparation

1️⃣ Prepare the mixture

In a bowl, combine the Bartolini Whole Chickpea Flour and water, mixing until you get a smooth and thick batter.

Add the Bartolini extra virgin olive oil, lemon zest and juice, parsley, mint, salt and pepper.

Mix well until the mixture is smooth and homogeneous, then let it rest for about 20 minutes to thicken naturally.

2️⃣ Shape the balls

Using your hands, form small balls and lightly coat them in breadcrumbs.

Place them on a surface, ready for cooking.

3️⃣ Cook

Cook the balls in a pan with a drizzle of Bartolini extra virgin olive oil, or in an air fryer at 180°C (356°F) for 12–15 minutes, until golden.

Turn them halfway through cooking to ensure even browning.

🧑‍🍳 Final touch

Crispy on the outside and soft on the inside, these chickpea balls are full of fresh, natural flavors—perfect to enjoy right away 🌿

Serve them warm, with a light sauce or simply with a drizzle of extra virgin olive oil on top.

A simple, genuine idea, perfect for any occasion—just the way we like it 💚
